At this time of year we have a lot of root vegetables coming through. This simple salad, bursting with raw goodness, will blast away the winter blues. Just mix together all of the ingredients below with a tangy vinaigrette to create a light and crunchy slaw.
1 raw beetroot, washed, peeled and grated
2 raw carrots, washed, peeled and grated
1 cup January King cabbage, thinly sliced
Half a swede, peeled and grated
Seeds of half a pomegranate
Honey Mustard Vinaigrette
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon prepared Dijon mustard
4 tablespoons extra-virgin olive oil
A pinch of salt & pepper
Mix all the veg in a bowl. Combine vinaigrette ingredients in a jar – give it a good shake and the pour over the veg. Stir to combine thoroughly.
